1/2 teaspoon salt

1/8 teaspoon cream of tartar

1/2 teaspoon baking soda

Instructions

1-Start by preheating your oven to 200°F (93°C) and lining baking sheets with parchment paper or silicone mats.

2-First, pop your 10 to 11 cups of air-popped popcorn and place it in a large bowl. In a medium saucepan, combine the light brown sugar, light corn syrup, unsalted butter, salt, and cream of tartar. Stir constantly over medium heat until the butter melts and the mixture begins to simmer, which helps create that smooth caramel base.

3-Let the mixture boil without stirring for about 4 minutes, or until it hits 234 235°F (112 113°C) on a candy thermometer. Once ready, remove it from the heat and stir in the baking soda right away this makes the caramel bubble up and get airy, giving your corn that ideal texture. Pour this frothy caramel over the popcorn and gently mix until every piece is coated evenly.

4-Spread the coated popcorn out on your prepared baking sheets. Bake it for 1 hour, remembering to stir every 20 minutes for even results. After baking, let it cool on the sheets for at least 30 minutes so the caramel hardens, then break it into clusters for serving.
