2 medium ripe tomatoes

1½ cups baby arugula

1 tablespoon thick balsamic vinegar or balsamic glaze

½ cup mayonnaise

½ cup fresh basil leaves

½ to 1 small garlic clove, finely chopped

¼ teaspoon fine sea salt

Instructions

First Step: Prepare and slice your fresh ingredients Start by washing fresh tomatoes and basil leaves thoroughly. Slice tomatoes into uniform quarter-inch rounds to ensure even layering. Slice the fresh mozzarella cheese evenly, matching the tomato slice thickness for balanced bites. Tear or keep basil leaves whole, depending on preference, for aromatic bursts.

Second Step: Toast the bread Slice the baguette or chosen crusty bread lengthwise, then cut into manageable sandwich sections. Lightly toast the cut bread slices under a preheated oven at 400°F (200°C) for about 5 minutes or until lightly golden. Alternatively, toast them in a skillet brushed with olive oil. Toasting provides a firm base that helps prevent soggy bread and adds a pleasant crunch.

Third Step: Prepare optional creamy basil sauce If using the creamy basil sauce, blend half to one small garlic clove, ½ cup mayonnaise or vegan mayo, ½ cup fresh basil leaves, ¼ teaspoon fine sea salt, and pepper until smooth. Set aside sauce for spreading on the sandwich.

Fourth Step: Assemble the sandwich layers Lightly drizzle or brush extra-virgin olive oil and optionally balsamic glaze on the toasted bread halves. Start layering by placing 1½ cups of baby arugula evenly over the bottom bread halves. Arrange alternating slices of fresh mozzarella and tomato carefully atop the arugula. Sprinkle flaky sea salt and freshly ground black pepper over the tomato slices to pull out their natural flavor. Scatter fresh basil leaves over the layered tomatoes to seal the flavor combination.
