Instructions
1-First, preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper, halve the butternut squash lengthwise, scoop out the seeds, and place it cut side down on the sheet. Bake for 45 minutes until it’s soft, then let it cool.
2-Next, scoop the flesh into a large bowl and mash it until it’s completely smooth. This step brings out the natural sweetness that makes this casserole so irresistible.
3-Stir in the milk, vanilla extract, sugar, melted butter, salt, and cinnamon. Gently fold in the lightly beaten eggs until just blended, creating a creamy base that’s full of flavor.
4-Lightly oil or spray a 9×13-inch (23×33 cm) casserole dish and pour in the mixture. Bake for 30 minutes to set the base.
5-While the base bakes, mix the pecan halves, melted butter, brown sugar, and cinnamon in a small bowl to prepare the topping.
6-After the initial 30 minutes, sprinkle the pecan mixture evenly over the casserole and bake for an additional 15 minutes until it’s perfectly crisp.
7-For an optional golden finish, remove the casserole, scatter marshmallows on top, and broil for 1-2 minutes until lightly browned.
