Instructions
1-Start by trimming and cutting about 1ΒΌ pounds of Brussels sprouts in half. Toss them with 1 tablespoon olive oil, salt, and pepper, then roast at 425Β°F for 12 to 20 minutes until golden and tender.
2-At the same time, take the bread pieces and toss them with 2 tablespoons olive oil and a bit of salt. Bake these for 14 to 18 minutes until they become crunchy croutons.
3-Thinly slice the remaining ΒΎ pound of Brussels sprouts and place them in a large bowl, ready for the dressing.
4-For the dressing, combine the Β½ cup grated Pecorino Romano cheese, 1Β½ tablespoons lemon juice, 3 garlic cloves, ΒΎ teaspoon salt, and black pepper in a bowl. Whisk in the remaining β cup olive oil until it emulsifies into a creamy mixture.
5-Massage the dressing into the sliced Brussels sprouts to soften and flavor them. Add the roasted sprouts and croutons, then toss everything together and adjust seasoning with more cheese, salt, olive oil, or lemon juice as needed.
6-Serve immediately for the best texture and taste, yielding a salad that serves six people perfectly.
