1 ½ lb (≈ 680 g) raw shrimp, peeled and deveined

6 cloves garlic, minced

3 Tbsp (≈ 45 ml) white wine

Kosher salt, to taste

Freshly ground black pepper, to taste

¼ cup (≈ 60 ml) melted butter

½ cup (≈ 50 g) panko bread crumbs

4 roma tomatoes, cored and diced

¼ cup (≈ 15 g) fresh basil leaves, julienned or roughly chopped

Freshly grated Parmesan cheese, generous amount for topping

Instructions

1-Preheat the oven: Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius).

2-Prepare the baking pan: Lightly grease a 9×13 inch baking pan with butter or non-stick spray to prevent sticking.

3-Mix the dry ingredients: In a large bowl, combine 2 cups of flour, 1 cup of sugar, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Stir well to mix evenly.

4-Add the wet ingredients: Add 1 cup of milk, 1/2 cup of melted butter, and 2 beaten eggs to the dry ingredients. Mix thoroughly until smooth and no lumps remain.

5-Pour batter into pan: Pour the batter evenly into the prepared baking pan, spreading it out with a spatula if needed.

6-Bake: Place the pan in the preheated oven and bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.

7-Cool and serve: Remove the pan from the oven and allow the cake to cool for about 10 minutes before cutting into squares and serving.
