Ingredients
1 cup (2 sticks) unsalted butter
1 cup packed light brown sugar
½ cup granulated sugar
2 large eggs
1 tablespoon pure vanilla extract
2 cups all-purpose flour
2 cups old-fashioned rolled oats
1 tablespoon chai spice blend (preferably ginger and cardamom-forward)
1 teaspoon baking soda
1 teaspoon kosher salt
2 cups powdered sugar for the maple chai glaze
2 teaspoons chai spice blend for the maple chai glaze
2 teaspoons pure vanilla extract for the maple chai glaze
½ teaspoon kosher salt for the maple chai glaze
2 tablespoons pure maple syrup for the maple chai glaze
4 to 6 tablespoons heavy cream for the maple chai glaze
Instructions
1-Brown the butter in a skillet over medium-high heat for 3 to 4 minutes until golden amber and nutty in aroma. Transfer to a mixing bowl and cool for 5 to 10 minutes.
2-Beat in brown sugar and granulated sugar until well combined and slightly cooled (about 2 to 3 minutes). Add eggs and vanilla extract and mix thoroughly.
3-In another bowl, combine flour, oats, chai spice, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Allow the dough to cool for 10 to 15 minutes.
4-Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
5-Portion dough into 18 to 20 balls (approximately 3 tablespoons each), flatten slightly, and space them 2 to 3 inches apart on the sheets.
6-Bake for 12 to 14 minutes until edges turn golden and centers are set. Cool completely on a rack.
7-Prepare the glaze by whisking powdered sugar, chai spice, vanilla, salt, maple syrup, and heavy cream until thick yet pourable. Dip cooled cookies into the glaze for a generous coating. Let glaze set for at least 10 minutes before serving.
