Ingredients
– 8 ounces cream cheese, room temperature
– ½ cup granulated sugar (100 grams)
– 1 teaspoon lemon juice
– 3 cups fresh blueberries (alternatives include frozen, thawed blueberries or blueberry pie filling)
– 12 egg roll wrappers
– Water for wetting edges of the wrappers
– Confectioners’ sugar for topping
– Cooking oil for spraying or frying
Instructions
1-Beat the 8 ounces of cream cheese, ½ cup granulated sugar (100 grams), and 1 teaspoon lemon juice together until smooth and creamy.
2-Gently fold in the 3 cups of fresh blueberries to keep their shape intact.
3-Place each of the 12 egg roll wrappers on a clean surface and add about 2-3 tablespoons of the cream cheese mixture to the center of each.
4-Wet the edges of the wrappers with water to help them seal properly.
5-Fold the bottom corner over the filling and press to seal, then fold in the right and left corners toward the center, pressing lightly to secure.
6-Finally, fold the top corner down and roll tightly, making sure all edges are sealed to avoid leaks.
7-Spray or brush the outside of the rolls with cooking oil for even browning.
8-Cook in an air fryer at 400°F for 4-5 minutes, flipping halfway, until golden brown. You can also try frying or baking as alternatives.
9-Serve them warm, dusted with confectioners’ sugar, and maybe add a scoop of ice cream for extra fun.
