Ingredients

– 450 grams ground beef (or ground meat of choice: turkey, chicken, lamb, or plant-based substitute)

– Pinch of salt

– Pinch of pepper

– 1 tablespoon avocado oil (or avocado oil spray)

– 5 small flour tortillas (can substitute whole wheat, low-carb, or gluten-free tortillas)

– Grated or sliced cheese (e.g., aged Havarti, Cheddar, Mozzarella, Monterey Jack, Swiss, or Gouda), amount as desired

– Finely chopped lettuce, amount as desired

– Finely chopped onion, amount as desired

– ¼ cup mayonnaise

– ¼ cup sour cream

– ¼ cup plain yogurt

– 1 tablespoon tomato paste

– 1 tablespoon honey Dijon mustard

– 1 ½ tablespoons relish (or 1 whole finely diced pickle)

– 1 tablespoon pickle juice (optional)

Instructions

1-First, mix the sauce: Combine ¼ cup mayonnaise, ¼ cup sour cream, ¼ cup plain yogurt, 1 tablespoon tomato paste, 1 tablespoon honey Dijon mustard, 1 ½ tablespoons relish, and 1 tablespoon pickle juice if you like. Stir it all together and set it aside this stores well for up to three days.

2-Next, prepare the meat and tortillas: Divide the 450 grams of ground meat into 5 equal parts, roll each into a ball, and press onto a tortilla. Sprinkle with a pinch of salt and pepper for seasoning.

3-Heat a skillet with 1 tablespoon avocado oil over medium-high heat.

4-Cook the tortilla meat-side down for 2-3 minutes until browned.

5-Flip it, add cheese, cover, and cook for 1-2 minutes until melted.

6-Top with finely chopped lettuce, onion, and the special sauce.

7-Serve right away and repeat for the rest.
