Ingredients
1 1/2 cups cookie crumbs
1/2 cup unsalted butter, melted
1 (8 oz) package cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 (8 oz) container whipped topping, thawed, divided
2 cups mixed berries (strawberries, blueberries, raspberries)
1 (3.4 oz) package instant vanilla pudding mix
2 cups cold milk
Additional berries and nuts for garnish
Instructions
1. In a medium bowl, mix cookie crumbs and melted butter until combined. Press into the bottom of a 13×9 inch pan.
2. In a large bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in half of the whipped topping. Spread over the cookie crust.
3. Layer mixed berries evenly over the cream cheese layer.
4. Prepare pudding mix with cold milk as per package instructions. Spread pudding mixture over the berry layer.
5. Top with remaining whipped topping, spreading evenly to cover all layers.
6. Chill in the refrigerator for at least 3 hours or until firm. Garnish with additional berries and nuts before serving.
