Instructions

First Step: Prepare the Kofta Mixture Bloom saffron in 2 tablespoons of warm water if using. In a large bowl, combine the ground beef or lamb with finely minced yellow onion, chopped fresh parsley, ground turmeric, sumac, bloomed saffron, salt, and black pepper. For an extra flavor boost, add optional herbs, ras el hanout spice, garlic, and red pepper flakes. Mix gently and thoroughly by hand, being careful not to overwork the mixture to keep the kofta tender.

Second Step: Marinate Cover the mixture and refrigerate for at least 30 minutes to let flavors meld. For deeper taste, marinate up to 24 hours if time permits.

Third Step: Form Kofta Patties Shape the meat mixture into small oval logs or golf ball-sized patties. Make sure the pieces are uniform to ensure even cooking, and finely diced herbs and onion help the mixture bind well.

Fourth Step: Cook Kofta Heat a grill or medium-high skillet with a small amount of olive oil. Cook the kofta patties for about 3-4 minutes on each side or until browned and cooked through.
