Beef Crispy Potatoes

Ingredients

– 2 kg floury potatoes for base of the dish

– 1 teaspoon bicarbonate of soda for helping with crisping

– Salt, preferably flaky sea salt

– About 2 liters beef stock (or chicken/lamb stock, or 2 liters water with 2 stock cubes)

– 100 g beef dripping or oil for frying medium

– 1 teaspoon flaky sea salt for finishing

Instructions

1-First, preheat your oven to 220°C (425°F, Gas Mark 7) to get that high heat for crisping. Then, peel and cut the potatoes into medium pieces about 2 inches across for even cooking. Next, place the potatoes in a deep pot, cover them with boiling beef stock or the water-stock cube mix, and add the bicarbonate of soda along with plenty of salt.

2-Bring the pot to a boil and simmer for 10 to 15 minutes until the potato edges turn tender this step is key for that fluffy interior. While that’s happening, put the fat in a large roasting tin and heat it in the oven for 15 to 20 minutes until it’s very hot. Once the potatoes are done, drain them in a colander and let them steam dry for 15 to 20 minutes to remove excess moisture.

3-Return the potatoes to the pot, cover it, and shake to roughen the edges for extra crispiness. Carefully add the potatoes to the hot fat in the roasting tin, turning them to coat fully. Roast for 45 to 55 minutes, turning once halfway through, then serve sprinkled with flaky sea salt.
