Ingredients

– 1 lb large shrimp, peeled and deveined, tails removed

– 1/2 cup buttermilk

– 1/4 tsp salt

– 1/4 tsp black pepper

– 1/4 tsp onion powder

– 1/4 tsp garlic powder

– 3/4 cup cornstarch

– Peanut oil or canola oil (use enough for 1 1/2 inches in a pot)

– 1/2 cup mayonnaise

– 3 Tbsp sweet chili sauce

– 3 tsp sriracha or to taste

– 8 to 12 small white corn tortillas or preferred kind

– 3 cups purple or green cabbage, thinly sliced

– 1 medium tomato, diced

– 1/4 cup cilantro, coarsely chopped

– Fresh lime wedges for serving

Instructions

1-In a bowl, mix 1/2 cup mayonnaise, 3 Tbsp sweet chili sauce, and 3 tsp sriracha to create the Bang Bang sauce; set aside.

2-In another bowl, combine 1/2 cup buttermilk, 1/4 tsp salt, 1/4 tsp black pepper, 1/4 tsp onion powder, and 1/4 tsp garlic powder to make the marinade.

3-Pour the marinade over 1 lb large shrimp and stir to coat; let it sit while heating the oil.

4-Remove the shrimp from the marinade one by one, allowing excess to drip off.

5-Dip each shrimp in 3/4 cup cornstarch until fully coated, tapping off any excess.

6-Heat 1 1/2 inches of peanut oil or canola oil in a pot to 375หšF.

7-Fry the shrimp in three batches for 2 1/2 to 3 minutes each until golden and crispy; transfer to a paper towel-lined plate.

8-Place the warm fried shrimp in a bowl, drizzle with half of the prepared sauce, toss gently, and let rest for 10 minutes.

9-Lightly toast 8 to 12 small white corn tortillas for about 30 seconds per side.

10-Assemble the tacos by adding desired toppings such as 3 cups thinly sliced purple or green cabbage, 1 medium diced tomato, and 1/4 cup coarsely chopped cilantro then place 2 to 3 shrimp on each tortilla.

11-Drizzle the remaining sauce over the tacos and serve with fresh lime wedges for squeezing.
