1 1/2 pounds thin sliced chicken breasts

Kosher salt, to taste

Fresh black pepper, to taste

Garlic powder, to taste

1/2 cup all-purpose flour

1/4 cup cornstarch

1 cup buttermilk

1 tablespoon hot sauce

1 large egg

2 cups or more panko bread crumbs

Vegetable or canola oil for shallow pan-frying

12 slices mozzarella cheese

12 slider rolls

Instructions

1-Dredge each chicken cutlet in the flour mixture, shaking off any excess.

2-Dip it next into the buttermilk mixture, letting the excess drip off for an even coat.

3-Press the cutlet firmly into the panko crumbs to ensure it’s fully covered.

4-Heat a thin layer of vegetable or canola oil in a skillet over medium heat. Fry the breaded chicken for about 2-3 minutes per side until it’s golden brown and reaches an internal temperature of 165°F. Drain the cooked cutlets on paper towels to remove any extra oil. While that’s happening, whisk together the bang bang sauce using mayonnaise, sriracha, sweet chili sauce, and honey.

5-Once the chicken is ready, cut the cutlets into slider-sized pieces. Place them on the bottom halves of the slider rolls, top with a slice of mozzarella cheese while it’s still warm for a slight melt, and drizzle on that bang bang sauce. Add the top buns and serve right away for the best taste and warmth. If you’re using an air fryer, cook the breaded chicken at 375°F for 10-12 minutes, flipping halfway, as a great alternative.
