Ingredients

– 3 large ripe bananas

– 3/4 cup sugar

– 1 large egg

– 1/3 cup vegetable oil

– 1/2 teaspoon cinnamon

Instructions

1-Preheat your oven: Preheat your oven to 350 degrees Fahrenheit and get a 12-cup muffin tin ready with paper liners or a light grease.

2-Mash the Bananas: Mash the 3 large ripe bananas in a big bowl until they’re smooth and ready to mix.

3-Add Sugar and Egg: Stir in the 3/4 cup sugar and 1 large egg using a wooden spoon until everything blends well.

4-Mix in Oil: Pour in the 1/3 cup vegetable oil and mix it all together thoroughly for a consistent batter.

5-Add Dry Ingredients: Add the 1 1/2 cups all-purpose flour, 1 teaspoon baking powder, 1 teaspoon baking soda, 1/2 teaspoon salt, 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg if you’re using it, and 3/4 cup chopped walnuts to the bowl.

6-Stir Batter: Gently stir with a wooden spoon just until the flour disappears and the walnuts are evenly spread don’t overdo it to keep things light.

7-Prepare Topping: In another small bowl, mix the remaining 3/4 cup chopped walnuts with 2 tablespoons brown sugar and 1 tablespoon melted butter to make that tasty topping.

8-Fill Muffin Cups: Spoon the batter into the muffin cups, filling them evenly, then add the topping on each one.

9-Bake Muffins: Bake for 20 to 23 minutes until they’re golden and a toothpick comes out clean when you check the center.

10-Cool Muffins: Let them cool in the tin for a few minutes before moving to a wire rack to cool all the way.
