Ingredients

2 cups milk (480 ml)

2 cups very ripe chopped bananas (340 g, about 3 to 4 medium bananas)

1 vanilla bean split in half (optional)

4 large egg yolks

½ cup granulated sugar (100 grams)

3 tablespoons cornstarch (24 grams)

¼ teaspoon fine sea salt

1 tablespoon unsalted butter (14 grams, at room temperature)

1 teaspoon vanilla extract (optional)

Instructions

First, heat the milk, chopped bananas, and vanilla bean if you’re using it, in a saucepan until it’s almost boiling. Let it sit covered for at least an hour to blend the flavors, or chill it overnight for even better results. Once it’s ready, strain out the banana pieces while pressing to get all the liquid, then move on to mixing your egg yolks with sugar, cornstarch, and salt.

1- Whisk the egg mixture thoroughly before adding the hot milk slowly to avoid any lumps.

2- Return everything to the heat and stir constantly until it thickens, which takes about 5 minutes.

3- Stir in the butter and vanilla extract at the end for a smooth finish, then chill it in the fridge.
