  • Yield: 12-14 slices 1x

Ingredients

Scale

2 1/4 cups (302g) vanilla wafer crumbs

10 tablespoons (140g) salted butter, melted

3 tablespoons (39g) sugar

24 ounces (678g) cream cheese, room temperature

1 cup (207g) sugar

3 tablespoons (24g) all-purpose flour

1/4 cup (58g) sour cream, room temperature

4 teaspoons banana extract

1 cup (240ml) pureed banana (about 2 medium fresh bananas)

3 large eggs, room temperature

1 teaspoon gelatin

2 tablespoons (30ml) milk

2 egg yolks

1/2 cup (120ml) heavy whipping cream

2 tablespoons (26g) sugar

3/4 teaspoon vanilla extract

1/4 teaspoon banana extract

2/3 cup (160ml) cold heavy whipping cream

5 tablespoons (36g) powdered sugar

1/2 cup cold heavy whipping cream

1/4 cup powdered sugar

1/2 teaspoon vanilla extract

Fresh sliced bananas

Instructions

1- Start by preheating your oven to 325°F (163°C) and preparing your crust mix the vanilla wafer crumbs, melted butter, and sugar, then press it into a greased 9-inch springform pan. Bake this for 10 minutes and let it cool before moving on, which helps build a sturdy base for your banana cream cheesecake.

2-focus on the filling: beat the cream cheese, sugar, and flour until smooth, then add sour cream and banana extract. Gently fold in the pureed bananas and eggs one at a time. Pour this mixture into the crust and place the pan in a larger one with warm water halfway up the sides for a water bath this step prevents cracking and ensures even baking for about 1 hour 30 minutes.

3- After baking, turn off the oven and let the cheesecake sit inside with the door closed for 30 minutes, then crack the door for another 30 minutes to cool gradually. For the Bavarian cream layer, sprinkle gelatin over milk, whisk egg yolks, heat cream with sugar and extracts, and combine everything before chilling and folding in whipped cream. Spread it over the cooled cheesecake and refrigerate for 5-6 hours to set.

4- Finally, whip up the topping with cold heavy cream, powdered sugar, and vanilla extract, then pipe it around the edges and add fresh sliced bananas just before serving. This banana cream cheesecake recipe with smooth filling takes about 2 hours 10 minutes of active prep plus chilling time, yielding 12-14 slices. It’s a rewarding process that results in a creamy, layered delight, perfect for any occasion.
