3 medium ripe bananas or 1 to 1 1/2 cups mashed banana
1/3 cup melted butter (75g) or 1/2 cup vegetable or olive oil
1 large egg (can use 2 eggs for added moisture)
1 teaspoon vanilla extract
1/4 cup sour cream or full-fat Greek yogurt

Instructions

1. Preheat the oven to 375°F and line a muffin tin with nonstick parchment or paper liners.
2. In a large bowl, whisk together flour, baking soda, salt, and sugars.
3. In a separate bowl, mash the bananas. Add the egg(s), melted butter or oil, vanilla, and sour cream or yogurt, mixing to combine.
4. Pour the wet ingredients into the dry ingredients, folding until just combined. Stir in the chocolate chips, ensuring minimal mixing to maintain fluffiness.
