Instructions
1. Preheat the oven to 375°F and line a muffin tin with nonstick parchment or paper liners.
2. In a large bowl, whisk together flour, baking soda, salt, and sugars.
3. In a separate bowl, mash the bananas. Add the egg(s), melted butter or oil, vanilla, and sour cream or yogurt, mixing to combine.
4. Pour the wet ingredients into the dry ingredients, folding until just combined. Stir in the chocolate chips, ensuring minimal mixing to maintain fluffiness.
5. Spoon the batter into the muffin cups, filling to the top for a domed shape. Top with additional chocolate chips if desired.
6. Bake for approximately 17-20 minutes or until a toothpick inserted in the center comes out clean. Alternatively, preheat the oven to 425°F, bake for 10 minutes, then reduce to 350°F and bake for an additional 5-7 minutes.
7. Allow muffins to cool in the tin for 5 minutes before transferring to a wire rack.
