1/2 cup unsalted butter (8 tablespoons) at room temperature, 113 g

3/4 cup granulated sugar (or honey), 150 g (or equivalent honey)

2 large eggs, lightly beaten

1 1/2 cups all-purpose flour, 180 g

1 teaspoon baking soda, about 4 to 5 g

1/2 teaspoon salt, about 2.5 to 3 g

1/2 teaspoon vanilla extract, 2.5 mL

1 cup chopped walnuts (optional), about 115 g

1/2 cup raisins (optional), about 75 g

Instructions

1-First, preheat oven to 350°F (175°C) and prepare your pan by greasing and flouring a loaf pan about 9.25 x 5.25 x 2.75 inches (approximately 23.5 x 13.5 x 7 cm). If using walnuts, lightly roast them on the stovetop, stirring until fragrant; chop and let cool. This banana bread recipe benefits from a well-preheated oven so the baking soda activates properly.

2-In a mixing bowl, cream together the softened butter and sugar until smooth. Mash the bananas to a chunky applesauce consistency and add them to the butter mixture with the lightly beaten eggs; mix until combined. In a separate bowl, whisk together the flour, baking soda, and salt, then add the dry mixture to the wet ingredients and stir until just combined.

3-Mix in the vanilla extract, and fold in walnuts and raisins if using, before pouring the batter into the prepared loaf pan. Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Let the bread rest in the pan for 10 minutes, then transfer to a wire rack to cool completely.
