Instructions

1-Step 1: Preparing the Macaron Shells First, get your piping bag ready with a large round tip and line your baking sheets with parchment paper. Sift 105 grams powdered sugar and 105 grams almond flour to remove any lumps. In a bowl over a double boiler, whisk 100 grams egg whites and 100 grams granulated sugar until frothy and the sugar dissolves completely.

Transfer this mixture to a stand mixer and whip on low for 30 seconds, then medium for 1-2 minutes until it turns white and fluffy. Crank it up to high until stiff peaks form. Gently fold in the sifted dry ingredients along with a few drops of red, pink, and teal food coloring until the batter is glossy and flows like ribbons.
