Ingredients

2 tablespoons olive oil
2 teaspoons Italian seasoning
1/2 pound baby Yukon Gold potatoes, cut in half
1 large shallot, sliced
2 garlic cloves, chopped
1 pound fresh green beans, trimmed
Kosher salt and freshly ground black pepper to taste
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
Optional: Red-pepper flakes, fresh rosemary, crushed fennel seeds, parsley

Instructions

1. Preheat oven to 425°F and line a sheet pan with parchment paper.
2. In a small bowl, mix together olive oil and Italian seasoning.
3. Spread the potatoes, shallots, and garlic on the sheet pan, tossing with half of the olive oil mixture. Arrange the potatoes cut side down with space between them.
4. Roast the potatoes in the oven for 15 to 20 minutes until they start browning.
5. Add the green beans to the pan, tossing to mix with the potatoes and other vegetables.
6. Place the halibut fillets in the pan, surrounded by the vegetables. Brush with the remaining oil mixture.
7. Bake for another 15 to 20 minutes until the potatoes are tender and the halibut reaches an internal temperature of 130 to 135°F.
8. Drizzle with fresh lemon juice and sprinkle lemon zest over the dish before serving.
