Instructions

1-Preheat oven to 375°F (190°C) and lightly grease a large baking sheet.

2-Toss potato wedges with olive oil in a large bowl.

3-In a small bowl, mix salt, garlic powder, and Italian seasoning.

4-Sprinkle shredded parmesan cheese over the oiled potato wedges and toss to coat evenly.

5-Add the seasoning mixture to the potatoes and toss again.

6-Arrange potato wedges on the prepared baking sheet in a single layer, skin-side down.

7-Bake for 25-35 minutes, until golden and fork-tender.

8-Garnish with freshly chopped parsley or cilantro (optional).

9-Serve warm, optionally with dipping sauces like ranch, blue cheese, ketchup, chimichurri, queso, mustard, or tzatziki.
