– 2 pounds (1kg) roasting potatoes

– 1/4 cup unsalted butter

– 3 garlic cloves, finely chopped or minced

– 1 tablespoon fresh lemon juice

– 1.5 teaspoons salt

– 1 tablespoon chopped flat-leaf parsley leaves

– 2 teaspoons flaky salt

– Zest of 1 lemon

Instructions

1-First, preheat your oven to 400°F/200°C. It’s that initial step that sets the stage for even cooking and perfect browning.
