1 small head of cabbage, coarsely chopped (about 2 lbs)
1 medium onion, sprinkled on top of the cabbage
1/4 cup melted butter for cabbage
1/4 cup melted butter for topping
1 (10 oz) can cream of mushroom soup (or cream of chicken as an alternative)
1/3 cup mayonnaise, mixed with mushroom soup
1 cup sharp cheddar cheese, shredded (reserve some for topping)
30 crushed butter-flavored crackers (or substitute with crushed corn flakes or breadcrumbs)
Salt and pepper, to taste
Instructions
1. Preheat oven to 350°F. Lightly grease a large baking dish.
2. Place the chopped cabbage in the dish and sprinkle with onion.
3. Pour 1/4 cup of melted butter over the cabbage and onion, then season with salt and pepper.
4. Cook the cabbage and onion mixture in a pan for 8-10 minutes until partially cooked down.
5. In a separate bowl, mix the cream of mushroom soup with mayonnaise. Spread over the cabbage mixture.
6. For the topping, combine 1/4 cup melted butter, remaining cheddar cheese, and crushed crackers.
7. Sprinkle the topping over the casserole.
8. Bake for 45 minutes until the topping is golden brown and the casserole is bubbly.
