🍳 Enjoy a lighter, protein-packed breakfast with this Egg White Omelette featuring bacon, spinach, and mushrooms.
🥓 This recipe offers a flavorful, satisfying dish without the cholesterol of whole eggs, perfect for a healthy start to your day.

  • Total Time: 30 minutes
  • Yield: 2 omelettes

Ingredients

– 6 large egg whites

– 2 teaspoons unsalted butter

– 4 strips of cooked bacon, crumbled

– 6 medium mushrooms, sliced

– 1 tablespoon olive oil

– 1/2 cup fresh spinach leaves, stems removed

– 1/2 cup cheese (such as Colby Jack variety), finely shredded

– 1 roma tomato, diced

– Fresh chives for garnish (optional)

– Salt and pepper to taste

Instructions

1-First, get your ingredients ready: Cook the bacon over medium heat until it’s crisp, then drain it on paper towels and chop it up. Next, use the same pan to cook the sliced mushrooms in olive oil over medium heat until they’re golden and soft, seasoning them lightly with salt and pepper. This step builds layers of taste without extra dishes.

2-Now, heat a 10-inch nonstick pan over medium heat and coat it with 1 teaspoon of unsalted butter to prevent sticking. Whisk your 6 large egg whites until they’re frothy, then pour half into the pan to coat the bottom evenly. Cook for about 2 minutes until the bottom turns golden, and gently flip it with a spatula to keep things light and airy.

3-Once flipped, sprinkle a quarter of the shredded cheese over the surface, then add spinach on one half and the mushrooms with bacon on the other. Carefully fold the omelette in half, slide it onto a plate, and top with the remaining cheese, diced tomato, and fresh chives if you like. Repeat for the second omelette to make two servings. Notes

🥞 Do not use a pan larger than 10 inches to make flipping easier.
🧈 Butter prevents egg whites from sticking and helps with even cooking.
🥚 For fluffier omelettes, whip egg whites just before cooking and re-whip before the second omelette.
