Ingredients
– 1/2 cup dill pickle relish (drained of most liquid) or processed pickles
– 2 pounds lean ground beef
– 1/4 cup crispy fried onions or 2 tablespoons onion flakes or 1 teaspoon onion powder
– 2 eggs
– 1 cup panko bread crumbs
– 1 tablespoon Worcestershire sauce
– 1 teaspoon smoke flavor
– 8 ounces sharp cheddar cheese, diced small
– 16 slices uncooked bacon, divided
– 1/2 cup ketchup
– 1 tablespoon maple syrup or brown sugar
– 1 teaspoon sriracha (optional)
Instructions
1-Preheat oven to 350°F (175°C).
2-Drain most liquid from the pickle relish.
3-In a large bowl, combine pickle relish, ground beef, crispy fried onions (or substitute), eggs, bread crumbs, smoke flavor, and Worcestershire sauce. Mix lightly.
4-Snip 6 bacon strips into pieces and gently mix into the meat mixture.
5-Fold in the diced cheese cubes gently.
6-Form the mixture into a loaf shape and place it in a 9×13 inch pan or on a baking sheet (lining with foil is optional).
7-Top the loaf with the remaining 10 slices of bacon.
8-Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C) when checked with a meat thermometer in the center.
9-While the meatloaf bakes, mix the glaze ingredients: ketchup, maple syrup (or brown sugar), and sriracha (if using).
10-After the initial baking time, brush the glaze mixture over the top of the meatloaf.
11-Bake for an additional 5-10 minutes.
