Ingredients

– 1 1/4 cups all-purpose flour

– 1 1/4 cups rolled old fashioned oats

– 1 teaspoon cinnamon

– 1/2 teaspoon baking soda

– 1/4 teaspoon salt

– 1/2 cup softened unsalted butter

– 3/4 cup packed light brown sugar

– 1 large egg

– 1 teaspoon vanilla extract

– 1 cup finely chopped peeled Granny Smith apple

– 2 teaspoons lemon juice

Instructions

1-Preheat oven: Preheat oven to 350 degrees Fahrenheit. Line two baking sheets with silicone mats or parchment paper.

2-Mix dry ingredients: In a bowl, whisk together the flour, oats, cinnamon, baking soda, and salt.

3-Cream butter and sugar: In the bowl of an electric mixer, cream together the butter and brown sugar until combined. Mix in the egg and vanilla extract.

4-Combine ingredients: Toss the apples with the lemon juice. Add the flour mixture to the wet ingredients and mix until combined, then fold in the apples.

5-Scoop dough: Use a medium cookie scoop or 2 tablespoons to scoop dough onto the baking sheets, spacing them about 2 inches apart. Flatten slightly.

6-Bake and cool: Bake one sheet at a time for about 14 to 15 minutes until the cookies are set. Cool on the baking sheet for several minutes, then transfer to a wire rack to cool completely. Store in an airtight container.
