Instructions

1-Begin by preparing the streusel topping first: mix the flour, oats, cinnamon, and brown sugar, then cut in the cold stick butter until it’s crumbly, and chill it to keep that perfect texture. Preheat your oven to 425°F and line a 12-cup muffin tin with paper liners for easy cleanup.

2-Next, in a large bowl, mix together the dry ingredients: the white flour, whole wheat flour, cornstarch, baking powder, salt, cinnamon, and apple pie spice. In a separate bowl, whisk the wet ingredients until smooth: the egg, Greek yogurt, oil, maple syrup, vanilla extract, and light brown sugar.
