1-Creating a flawless angel food cake starts with proper setup, beginning by preheating your oven to 325°F and positioning the rack in the lower middle for even baking. First, pulse the granulated sugar in a food processor until it’s superfine, then set aside 1 cup for the egg whites while mixing the rest with cake flour and salt to aerate them. This step ensures a smooth texture that helps the cake rise beautifully.

2-Next, in a clean bowl, whip the 12 large egg whites and 1 and 1/2 teaspoons cream of tartar on medium-low speed until foamy. Gradually add the reserved superfine sugar on medium-high speed until soft peaks form, then mix in 1 and 1/2 teaspoons pure vanilla extract for a hint of flavor. Gently fold in the dry ingredients in three additions to keep the volume intact, preventing any deflation that could make the cake dense.

3-Pour the batter into an ungreased 9 or 10-inch tube pan and smooth the top for an even bake.
