Instructions
1-Trim the ends of the zucchinis and cut each one into quarters lengthwise, then cut crosswise into 3/4-inch thick half-moons for bite-sized pieces. Place them in a large mixing bowl.
2-Drizzle the zucchini pieces with 1 ½ tablespoons of olive oil and toss to coat evenly.
3-In a separate bowl, mix together 2 tablespoons panko breadcrumbs, 2 tablespoons finely grated Parmesan cheese (or nutritional yeast), 1 tablespoon white whole wheat flour or all-purpose flour, ½ teaspoon salt, ¼ teaspoon onion powder, and ¼ teaspoon black pepper.
4-Sprinkle the breadcrumb mixture over the zucchini and toss to coat the pieces as evenly as possible.
5-Preheat the air fryer to 400 degrees Fahrenheit.
6-Arrange half of the zucchini in a single layer in the air fryer basket (no cooking spray needed).
7-Air fry for 7 to 9 minutes, shaking the basket occasionally, until the breadcrumbs are golden and the zucchini is tender but not mushy.
8-Transfer the cooked zucchini to a serving plate or keep warm in an oven preheated to 200 degrees Fahrenheit if desired.
9-Repeat the air-frying process with the remaining zucchini.
10-Serve immediately for the best taste and texture.
