4 ounces cremini mushrooms, quartered

1 small red onion, chopped into one-inch pieces

1 carrot, sliced into thin rounds

1 heaping cup small broccoli florets

1 heaping cup small cauliflower florets

3 tablespoons extra-virgin olive oil

1 teaspoon Italian seasoning

½ teaspoon garlic powder

½ teaspoon salt

Several grinds of black pepper

1 lemon wedge for squeezing

Grated Parmesan cheese, optional

Chopped fresh parsley for garnish

Instructions

1-Preheat the air fryer to 375°F (190°C) to ensure even cooking right from the start.

2-Combine all chopped vegetables in a large bowl, including the zucchini or yellow squash, red bell pepper, cremini mushrooms, red onion, carrot, broccoli florets, and cauliflower florets.

3-Add 3 tablespoons of extra-virgin olive oil, 1 teaspoon of Italian seasoning, ½ teaspoon of garlic powder, ½ teaspoon of salt, and several grinds of black pepper, then toss everything thoroughly for even coating.

4-Arrange the seasoned vegetables in a single layer in the air fryer basket, avoiding overcrowding to prevent steaming; cook in batches if needed.

5-Cook at 375°F (190°C) for 10 to 15 minutes, shaking the basket halfway through to promote even browning, aiming for about 12 minutes total.

6-If using multiple batches, repeat the arrangement and cooking steps for the rest.

7-Transfer the vegetables to a serving dish, squeeze the juice from 1 lemon wedge over the top, and optionally sprinkle with grated Parmesan cheese and garnish with chopped fresh parsley.
