Ingredients

Lentils (1 cup, dried)
Spinach (2 cups, fresh)
Tomatoes (1 cup, diced)
Onion (1 medium, chopped)
Garlic (3 cloves, minced)
Vegetable broth (4 cups)
Cumin (1 teaspoon)
Chili powder (1 teaspoon)
Salt (to taste)
Black pepper (to taste)
Olive oil (1 tablespoon)
Carrot (1 medium, diced)
Celery (1 stalk, chopped)
Lemon juice (1 tablespoon)
Water (as needed)


Instructions

1. Rinse one cup of lentils under cold water until the water runs clear.
2. In a large pot or pressure cooker, heat a small amount of oil over medium heat.
3. Add chopped onions and sauté until they turn translucent.
4. Stir in minced garlic and cook for another minute until fragrant.
5. Add diced tomatoes and cook for a few minutes until they soften.
6. Season with cumin, chili powder, and any other preferred spices for flavor.
7. Pour in vegetable broth and bring the mixture to a gentle boil.
8. Add the rinsed lentils and stir well to combine.
9. Cover and simmer on the stovetop for about 25-30 minutes or cook in a pressure cooker for about 10-15 minutes until lentils are tender.
10. Once the lentils are soft, stir in fresh spinach and cook for 2-3 minutes until wilted.
11. Adjust seasoning with salt and pepper to taste.
12. Blend a portion of the soup if a creamier texture is desired, or leave it chunky.

Notes
