Grated Parmesan cheese
Garlic powder
Onion powder
Italian herbs
Salt
Black pepper
Eggs
Marinara sauce
Mozzarella cheese
Fresh basil or parsley
Instructions
1. Preheat the oven to 425°F and line a baking sheet with parchment paper or lightly grease it.
2. Pound the boneless, skinless chicken breasts to an even thickness for even cooking.
3. In a shallow dish, mix Panko breadcrumbs, Italian breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, Italian herbs, salt, and pepper.
4. In a separate shallow dish, beat the eggs.
5. Dip each chicken breast into the beaten eggs, ensuring it is fully coated.
6. Press the chicken into the breadcrumb mixture, covering it completely and pressing gently to adhere.
7. Place the coated chicken breasts onto the prepared baking sheet, ensuring they are not touching.
8. Bake in the preheated oven for 20-25 minutes or until the chicken is golden brown and crispy.
9. Remove the chicken from the oven and spoon marinara sauce over each piece.
10. Sprinkle shredded mozzarella cheese on top of the marinara sauce.
11. Return the chicken to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
12. For extra crispiness, broil for 1-2 minutes, watching closely to prevent burning.
13. Remove from the oven and garnish with fresh basil or parsley.
14. Serve hot with pasta or a side salad for a complete meal.
Notes
For extra crispiness, lightly spray the coated chicken with cooking spray before baking to help the breadcrumbs turn golden brown.
Pound the chicken breasts to an even thickness to ensure they cook evenly and stay tender.
Let the baked chicken rest for a couple of minutes before adding the marinara and cheese to help maintain its crisp texture.
