Ingredients

Instructions
1. Dice the carrots, celery, onions, and mince the garlic.
2. Cut the chicken into bite-sized pieces if using boneless, or leave whole if using bone-in.
3. Heat a large pot over medium heat and add a little oil.
4. Sauté the onions, carrots, celery, and garlic until softened.
5. Add the chicken to the pot and cook until lightly browned.
6. Pour in the chicken broth and add thyme, parsley, and bay leaves for seasoning.
7. Bring the soup to a boil, then reduce heat and let it simmer.
8. If cooking the rice separately, cook it in another pot according to package instructions.
