Ingredients
Lasagna noodles
Ricotta cheese
Mozzarella cheese
Parmesan cheese
Spinach (fresh or frozen)
Eggs
Marinara sauce

Italian seasoning (optional)
Olive oil (for greasing dish)
Ground beef or sausage (optional)
Instructions
1. Boil lasagna noodles according to package instructions until al dente, then drain and lay flat.
2. Prepare the filling by mixing ricotta, mozzarella, Parmesan cheese, spinach, and eggs in a bowl.
3. Spread a thin layer of marinara sauce on the bottom of a baking dish.
4. Take each noodle and spread an even layer of the cheese mixture over it.
5. Roll up each noodle tightly and place seam-side down in the prepared baking dish.
6. Pour the remaining marinara sauce over the top of the roll-ups.
7. Sprinkle additional mozzarella and Parmesan cheese over the rolls.
8. Preheat the oven to 375°F.
9. Cover the dish with foil and bake for 25 minutes.
10. Remove the foil and bake for another 10-15 minutes until the cheese is bubbly and golden.
11. Let the lasagna rolls rest for a few minutes before serving.
12. Serve warm with garlic bread and salad if desired.
